Sfakian Pie Minoan Baking with Tzikoudia and Honey Cooking Course Group Family Experience

The Pie of Sfakia

Five ingredients. An ancient recipe. One shared fire.

Apokoronas, Crete

Arrival

You arrive through the hidden paths of a traditional Cretan village —
and the first clue is already waiting.

A small trail leads you to the farmhouse,
that gave this day its setting.

Before the cooking begins,
you walk the land —
following the story of each ingredient to its source.

This experience is shorter and focused:
one ancient recipe,
from one of the most independent corners of Crete.

Everything you need is here.
Nothing extra is required.

Rediscover the ancient paths.

What you work with

The Sfakian pie has been made this way for thousands of years.

Before you cook,
you find each ingredient where it lives on this land.

Flour from the stone wheat circle —
with the story of Demeter and the grain.

Olive oil from the ancient tree.

Tsikoudia from the grapevines.

Honey from the bees —
and the story of Melissa, the Bee Goddess of ancient Crete,
whose name is still carried by the thyme flowers on these hills.

Soft white cheese —
with a story Sotiris will tell you when you get there.

Each ingredient has a source.
You gather it before you cook it.

This is the Mediterranean diet in its most essential, ancient form.

Simple ingredients. Nothing extra.

Making the pies

You prepare the dough,
roll it thin,
fill it with soft cheese,
and cook it on the stone.

It takes practice —
and a bit of patience.

Hands learn quickly.
Some try once.
Some try five times.

Thin as paper,
warm and golden from the baking.

Then you pour honey over it and eat it warm.

The recipe is simple enough to remember.
You will be able to make Sfakian pies at home —
and when you do,
you will tell the story of where you learned.

Roll it until it almost disappears.

Where it comes from

Sfakia was never conquered.

Not by the Venetians.

Not by the Ottomans.

And the food of Sfakia reflects that —
made from exactly
what this rough, beautiful land provides:
grain,
cheese,
honey,
oil,
and a shot of Tsikoudia.

This pie is ancient.
It has been made this way,
in this region,
long before anyone thought to write it down.

It carries the character of the people who created it:
free,
simple,
complete.

You don't need much to make something unforgettable.

Cooking together

Eleni guides the process —
with patience, precision and warmth.

Making Sfakianopita is a skill that takes years to master
and an afternoon to begin.

You will leave knowing the technique.

Sotiris brings stories where they fit:
the myths behind the ingredients,
the freedom of Sfakia,
the old ways of Crete.

Marieke holds the space and the flow of the group.

You cook together,
hands in the dough,
pan on the fire,
honey ready.

Each person finds their place naturally —
and together you create something
that has been shared across this island
for thousands of years.

The recipe travels with you.
You can make these at home,
for your family,
for your friends —
and you will know exactly where the ingredients come from.

It doesn’t need to be perfect to be shared.

Who this is for

This shorter workshop is ideal for families
and curious hands of all ages —

with a playful ingredient treasure hunt,

and can be enjoyed on its own or combined with a longer day.
