What you work with
The Sfakian pie has been made this way for thousands of years.
Before you cook,
you find each ingredient where it lives on this land.
Flour from the stone wheat circle —
with the story of Demeter and the grain.
Olive oil from the ancient tree.
Tsikoudia from the grapevines.
Honey from the bees —
and the story of Melissa, the Bee Goddess of ancient Crete,
whose name is still carried by the thyme flowers on these hills.
Soft white cheese —
with a story Sotiris will tell you when you get there.
Each ingredient has a source.
You gather it before you cook it.
This is the Mediterranean diet in its most essential, ancient form.

Making the pies
You prepare the dough,
roll it thin,
fill it with soft cheese,
and cook it on the stone.
It takes practice —
and a bit of patience.
Hands learn quickly.
Some try once.
Some try five times.
Thin as paper,
warm and golden from the baking.
Then you pour honey over it and eat it warm.
The recipe is simple enough to remember.
You will be able to make Sfakian pies at home —
and when you do,
you will tell the story of where you learned.
Roll it until it almost disappears.
Where it comes from
Sfakia was never conquered.
Not by the Venetians.
Not by the Ottomans.
And the food of Sfakia reflects that —
made from exactly
what this rough, beautiful land provides:
grain,
cheese,
honey,
oil,
and a shot of Tsikoudia.
This pie is ancient.
It has been made this way,
in this region,
long before anyone thought to write it down.
It carries the character of the people who created it:
free,
simple,
complete.

and an afternoon to begin.
