Wild Herbal Walk in Crete

recognizing, collecting & working with Cretan aromatic herbs

What grows in the wild
carries its own strength.

Across the hills and fields of Crete, aromatic herbs grow freely —
oregano, sage, dittany, malotira, lavender and more.

This guided walk with Manolis takes place on and around his organic land in Apokoronas.

We learn to recognise wild herbs in their natural environment,
to understand when to harvest and when to leave them untouched,
and to approach gathering them with respect.

Simple. Sensory. Grounded in the season.

Recognition begins with attention.

Identification & Harvest

Manolis introduces the most common aromatic herbs of the region
and explains their traditional uses in everyday Cretan life.

We explore:

- How to identify them safely

- How scent changes between fresh and dried

- How much to harvest without exhausting the plant

- How drying affects strength and aroma

Participants may gather small quantities for personal use.

The focus is not collecting more —
but learning to recognize clearly.

Take only what you can carry with care.

Herb Bundles & Tea

After the walk, we return to the shaded area of the farm.

Together, we create small herb bundles from what has been gathered —
learning how to tie them properly for drying and storage.

Manolis explains how drying changes aroma and strength,
and how herbs have traditionally been stored and used in everyday Cretan life.

We then sit for a simple seasonal refreshment and herbal tea,
allowing time for questions and quiet exchange.

Nothing elaborate.
Just time to settle what we have learned.

Learning stays longer
when the senses are involved.
